Ingredients
  

  • 1 cup medjool dates pitted
  • 1/2 cup almonds raw
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup unsweetened shredded coconut
  • 1 tablespoon coconut oil melted
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon sea salt

Method
 

  1. Place dates and almonds in a food processor and pulse until finely chopped.
  2. Add cocoa powder, shredded coconut, melted coconut oil, vanilla extract, and sea salt. Process until mixture is sticky and holds together.
  3. Scoop out small portions and roll into 1-inch balls using your hands.
  4. Place energy bites on a baking sheet or plate and refrigerate for at least 30 minutes to firm up.
  5. Store in an airtight container in the refrigerator for up to 1 week.

Notes

  • For variation, add a tablespoon of almond butter or chopped nuts to the mixture.
  • These bites are perfect for a quick paleo-friendly snack or pre-workout energy boost.
  • Roll in extra shredded coconut or cocoa powder for a decorative touch.
