Za'atar-Spiced Chicken Thighs with Charred Lemon
Boneless chicken thighs marinated in za'atar, olive oil, and lemon, then seared until crisp with charred lemon halves.
Ingredients
- 8 boneless, skinless chicken thighs about 1.5 lb
- 3 tbsp olive oil
- 3 tbsp za'atar spice blend
- 2 lemons 1 juiced, 1 halved
- 3 cloves garlic minced
- 1/2 tsp sea salt
- 1/4 tsp black pepper
- 2 tbsp fresh parsley chopped, to garnish
Instructions
- In a bowl, combine olive oil, za'atar, lemon juice, garlic, salt, and pepper.
- Add chicken thighs and toss to coat. Marinate at room temperature for 20-30 minutes, or refrigerate up to 4 hours.
- Heat a large skillet over medium-high heat. Sear chicken thighs 6-7 minutes per side until deeply golden and cooked through.
- In the last few minutes, add the lemon halves cut-side down to the skillet to char.
- Rest the chicken 5 minutes, then garnish with parsley and serve with the charred lemon for squeezing.
