Za'atar is one of those spice blends that makes everything it touches taste more like itself — this earthy mix of thyme, sumac, and toasted sesame turns simple chicken thighs into something you'll want to make on repeat. A short marinade with olive oil and lemon juice tenderizes the meat while the za'atar clings to every surface.

Searing the chicken skin-side down first gets it properly crisp, and charring lemon halves alongside mellows their sharpness into something almost sweet, perfect for squeezing over the finished dish.

Chicken thighs bring a satisfying amount of protein to the plate without needing a starchy side to feel complete, which is why this one works well for anyone eating lower-carb or simply trying to build meals around lean, unprocessed protein and healthy fats from the olive oil. It reheats well too, so leftovers make a quick lunch sliced over greens the next day.
