Za'atar Baked Chicken with Roasted Beets and Chickpeas
Za'atar-rubbed baked chicken thighs with roasted beets and crisped chickpeas for an iron- and folate-rich dinner.
Za'atar is one of those spice blends that turns simple baked chicken into something you actually look forward to — earthy, herby, a little tangy from the sumac. Here it coats chicken thighs that bake until fully cooked through and juicy, alongside beets and chickpeas that roast together until tender and slightly caramelized at the edges.
Beets bring folate to the plate, chickpeas add both folate and iron, and the chicken rounds it out with solid protein — together they make this a genuinely well-supported dinner for the extra nutrient needs of pregnancy, which is why we've tagged it for anemia support as well.
A dollop of plain yogurt on the side, if you like, adds a cool, tangy contrast to the warm spices.
Ingredients
These ingredients are common at Middle Eastern grocers; a well-stocked international supermarket usually carries them too.
