Both avocado and almonds are naturally rich in vitamin E, a nutrient often mentioned in the context of anti-aging and skin health, and together they give the salad a satisfying, almost buttery richness. Cherry tomatoes and a squeeze of lemon keep things from feeling too heavy.

Toss it together right before eating, since the avocado is best enjoyed fresh rather than sitting in the dressing for long. A handful of toasted pumpkin seeds or a few slices of cucumber make an easy addition if you want to stretch the salad or add another layer of crunch.

Ingredients
