Vegetarian Sushi Rolls with Avocado & Cucumber

Hand-rolled sushi built from seasoned rice, crisp cucumber, creamy avocado, and nori, finished with a splash of soy sauce.

Ingredients

  • 1 cup sushi rice uncooked
  • 1 1/4 cups water
  • 3 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 4 sheets nori (seaweed)
  • 1 medium cucumber julienned
  • 1 medium avocado sliced
  • 1/2 cup carrot julienned
  • 2 tablespoons soy sauce or tamari for serving

Instructions

  1. Rinse sushi rice under cold water until water runs clear. Combine rice and water in a saucepan, bring to a boil, then cover and simmer for 15 minutes until water is absorbed.
  2. Mix rice vinegar, sugar, and salt in a small bowl until dissolved. Fold into cooked rice and let cool slightly.
  3. Place a sheet of nori shiny side down on a bamboo mat. Spread a thin layer of rice over nori, leaving a 1-inch border at the top.
  4. Arrange cucumber, avocado, and carrot strips across the center of the rice.
  5. Using the mat, roll the sushi tightly from the bottom, sealing the edge with a little water.
  6. Slice each roll into 6–8 pieces with a sharp knife. Serve with soy sauce or tamari.
