Vegan Lentil “Meatballs” with Tomato Sauce

Mashed lentils and breadcrumbs shaped into meatballs, baked golden and simmered in a simple tomato sauce.

Ingredients

  • 1 cup cooked lentils
  • 1/2 cup breadcrumbs use gluten-free if needed
  • 1 small onion finely diced
  • 2 cloves garlic minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1 cup tomato sauce for serving
  • 1 tablespoon olive oil for baking or frying

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a mixing bowl, mash cooked lentils with diced onion, minced garlic, breadcrumbs, salt, black pepper, oregano, and basil until combined but still slightly chunky.
  3. Form the mixture into small meatballs (about 12–16 depending on size).
  4. Place meatballs on a baking sheet, drizzle with olive oil, and bake for 20–25 minutes, turning halfway through until golden brown.
  5. Heat tomato sauce in a skillet over medium heat.
  6. Add baked lentil meatballs to the sauce and simmer for 5 minutes to coat.
  7. Serve warm with pasta, rice, or as a sandwich filling.
