Turkey Sloppy Joes with Sweet Potato Buns

Saucy ground turkey sloppy joe filling piled between roasted sweet potato rounds instead of a soft white bun.

Ingredients

  • 1 lb ground turkey (93% lean)
  • 1 tbsp olive oil
  • 1/2 onion diced
  • 1/2 bell pepper diced
  • 2 cloves garlic minced
  • 1 cup low-sugar tomato sauce
  • 1 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tsp smoked paprika
  • 1 tsp apple cider vinegar
  • salt and pepper to taste
  • 2 large sweet potatoes sliced into 8 thick rounds and roasted

Instructions

  1. Preheat oven to 400°F. Arrange sweet potato rounds on a baking sheet, brush with a little olive oil, and roast 20-25 minutes, flipping halfway, until tender.
  2. Meanwhile, heat olive oil in a skillet and cook onion and bell pepper until softened, about 5 minutes.
  3. Add ground turkey and garlic, and cook, breaking up the meat, until browned, about 7 minutes.
  4. Stir in tomato sauce, tomato paste, Worcestershire sauce, smoked paprika, and vinegar. Simmer 10 minutes, until thickened. Season with salt and pepper.
  5. Spoon turkey mixture between two sweet potato rounds per serving, like a sandwich, and serve warm.
