Turkey Sloppy Joes with Sweet Potato Buns
Saucy ground turkey sloppy joe filling piled between roasted sweet potato rounds instead of a soft white bun.
Ingredients
- 1 lb ground turkey (93% lean)
- 1 tbsp olive oil
- 1/2 onion diced
- 1/2 bell pepper diced
- 2 cloves garlic minced
- 1 cup low-sugar tomato sauce
- 1 tbsp tomato paste
- 1 tbsp Worcestershire sauce
- 1 tsp smoked paprika
- 1 tsp apple cider vinegar
- salt and pepper to taste
- 2 large sweet potatoes sliced into 8 thick rounds and roasted
Instructions
- Preheat oven to 400°F. Arrange sweet potato rounds on a baking sheet, brush with a little olive oil, and roast 20-25 minutes, flipping halfway, until tender.
- Meanwhile, heat olive oil in a skillet and cook onion and bell pepper until softened, about 5 minutes.
- Add ground turkey and garlic, and cook, breaking up the meat, until browned, about 7 minutes.
- Stir in tomato sauce, tomato paste, Worcestershire sauce, smoked paprika, and vinegar. Simmer 10 minutes, until thickened. Season with salt and pepper.
- Spoon turkey mixture between two sweet potato rounds per serving, like a sandwich, and serve warm.
