Turkey Sloppy Joes with Sweet Potato Buns

Sloppy joes get a double glow-up here: lean ground turkey stands in for beef, and thick roasted sweet potato rounds take the place of the usual soft bun. The filling still gets that familiar tangy-sweet tomato sauce, simmered down with peppers and onion.
This is a fun one for kids who grew up on the classic sandwich version, since the flavor is nearly identical, and it fits naturally into a weight-loss-friendly rotation since the sweet potato buns bring fiber and nutrients that a refined bun simply doesn't.
Roast the sweet potato rounds until they're tender enough to bite through cleanly but still hold their shape under the filling.
Ingredients
- 1 lb ground turkey (93% lean)
- 1 tbsp olive oil
- 1/2 onion — diced
- 1/2 bell pepper — diced
- 2 cloves garlic — minced
- 1 cup low-sugar tomato sauce
- 1 tbsp tomato paste
- 1 tbsp Worcestershire sauce
- 1 tsp smoked paprika
- 1 tsp apple cider vinegar
- salt and pepper — to taste
- 2 large sweet potatoes — sliced into 8 thick rounds and roasted

Instructions
- 1Preheat oven to 400°F. Arrange sweet potato rounds on a baking sheet, brush with a little olive oil, and roast 20-25 minutes, flipping halfway, until tender.
- 2Meanwhile, heat olive oil in a skillet and cook onion and bell pepper until softened, about 5 minutes.
- 3Add ground turkey and garlic, and cook, breaking up the meat, until browned, about 7 minutes.
- 4Stir in tomato sauce, tomato paste, Worcestershire sauce, smoked paprika, and vinegar. Simmer 10 minutes, until thickened. Season with salt and pepper.
- 5Spoon turkey mixture between two sweet potato rounds per serving, like a sandwich, and serve warm.
