Thai-Inspired Turmeric Coconut Vegetable Soup
A light Thai-inspired coconut soup with turmeric, cauliflower, mushrooms, and snap peas, low in sodium and saturated fat.
Coconut soup gets its signature richness from coconut milk, and this version uses it thoughtfully—a modest amount of light coconut milk stretched with low-sodium vegetable broth so the golden, aromatic broth still carries real body without overloading on saturated fat. Turmeric, ginger, and lemongrass build layers of warmth.
Keeping the coconut milk to a light, measured amount is the key move here, since coconut fat is naturally high in saturated fat—using the light variety and diluting it with broth keeps this soup within a genuinely heart-conscious range while still tasting creamy. Cauliflower, mushrooms, and snap peas add fiber, potassium, and volume with virtually no added sodium, and a finish of fresh lime juice brightens everything without needing salt.

- 0.75 cup light coconut milk
- 3.25 cups vegetable broth — low-sodium
- 2 cups cauliflower florets
- 1 cup mushrooms — sliced
- 1 cup snap peas
- 2 tbsp lime juice
- 2 tbsp fresh cilantro and Thai basil — for garnish

Instructions
- 1Heat olive oil in a pot over medium heat; sauté onion 4-5 minutes until translucent. Add garlic, turmeric, ginger, and lemongrass; cook 1 minute.
