Suya-Spiced Salmon Poke Bowl with Pickled Ginger

Poke bowls are built on the idea of raw or lightly seared fish cubed and dressed simply, then piled over rice with fresh toppings. Suya spice, usually reserved for grilled meat, works surprisingly well here too — a light dusting on the salmon along with soy sauce, sesame oil, and lime gives it a smoky, peppery note that a plain soy marinade wouldn't.
Salmon is the backbone of this bowl nutritionally as well as visually, which is why it's tagged both high-protein and heart-healthy — a generous cube of fish per serving alongside avocado for healthy fat. Pickled ginger and a scatter of scallions and sesame seeds round out the toppings.
Use sushi-grade salmon if you're planning to leave it raw, and keep it well chilled until just before serving. If sushi-grade fish isn't available, a quick sear on the outside while keeping the center rare works just as well with this spice rub.
