For the cucumber-mint yogurt

  • 1 cup plain low-fat yogurt
  • 0.5 cucumbergrated and squeezed dry
  • 2 tbsp fresh mintchopped
  • 1 tbsp lemon juice

Instructions

  1. 1Mix ground peanuts, paprika, cayenne, ginger, and garlic powder in a bowl to make the suya spice blend.
  2. 2Toss chicken cubes with olive oil and half the spice blend; thread onto skewers and let marinate 20 minutes.
  3. 3Grill or grill-pan over medium-high heat, 3-4 minutes per side, until cooked through and lightly charred.
  4. 4While the chicken cooks, stir together yogurt, grated cucumber, mint, lemon juice, and remaining spice blend for the dipping sauce.
  5. 5Serve hot skewers with the cucumber-mint yogurt on the side.
