Suya-Spiced Beef Tacos with Pickled Onion Slaw

Suya is the roadside grill spice of Nigerian evenings — ground roasted peanuts, cayenne, ginger, and garlic rubbed onto skewered beef. Here that same rub goes onto flank steak destined for a hot skillet instead of charcoal, then gets folded into warm corn tortillas the way you'd build a taco in Mexico City.
The beef itself is the protein workhorse of this dish: lean flank steak sliced thin against the grain gives a solid protein count per taco, which is why we've tagged this one high-protein and a good fit if you're eating around fitness or athletic training. The peanut in the suya rub adds a little healthy fat and crunch of its own, no extra nuts needed.
