Steamed Vegetables with Sardines (Diabetes-Friendly & Heart-Healthy)

A colorful mix of steamed broccoli, cauliflower, and cabbage topped with sardines and a lemon-olive oil drizzle — light and heart-friendly.

Ingredients

  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 medium carrot sliced into thin rounds
  • ½ medium cabbage shredded or chopped
  • 1 handful spinach or ugu leaves optional, for extra greens
  • 1 small onion sliced
  • 1 clove garlic crushed, optional
  • 1 tbsp olive oil for finishing
  • 1 can sardines in water or olive oil drained
  • 1 pinch salt to taste
  • 1 pinch black pepper to taste
  • ½ tsp ginger powder optional, for flavor & anti-inflammatory benefit
  • 1 tbsp lemon juice to drizzle before serving

Instructions

  1. Wash and chop all vegetables.
  2. In a steaming basket or pot, steam broccoli, cauliflower, carrot, and cabbage for about 5–7 minutes until tender but still slightly crisp.
  3. Add spinach/ugu leaves in the last 1–2 minutes of steaming.
  4. In a small pan, warm sardines gently (if using canned in water, you can add a teaspoon of olive oil for flavor).
  5. Combine steamed vegetables in a bowl, season lightly with salt, pepper, and ginger.
  6. Place sardines on top of the vegetables.
  7. Drizzle with olive oil and lemon juice before serving.
