Steamed Fish and Ginger Rice Congee
A silky rice congee simmered until creamy, finished with delicate steamed white fish, ginger, and scallion greens.
Congee is one of the gentlest ways to eat rice — simmered low and slow until the grains break down into a soft, almost custardy porridge that's easy to sit with even on an off day. Here it's topped with thin slices of white fish that cook through in the last few minutes from the congee's own heat, so nothing needs a separate pan.
Ginger and scallion greens do all the flavor work, and we left out garlic and onion bulb on purpose to keep this genuinely low-FODMAP. The sesame oil at the end is optional and used sparingly, just enough to round out the bowl without adding much fat.
It's a comforting, low-effort meal that works equally well for breakfast or a light lunch, and it's especially welcome on days when a sensitive stomach wants something warm, plain, and easy to digest.
