This is about as fast as cooking gets — garlic sizzled in olive oil for thirty seconds, then a big pile of spinach stirred in until it wilts down to almost nothing, two or three minutes later.
Olive oil and leafy greens are staples of the kind of light, low-salt cooking that's often suggested for thyroid-conscious diets, and this stir-fry leans into both without complicating things. A squeeze of lemon at the end brightens the whole dish if you want it, but it's just as good without.
