Ajo blanco is one of Spain's oldest cold soups, built from almonds, bread, garlic, and olive oil, and traditionally topped with a scatter of sweet green grapes. Blended until silky and served well-chilled, it's an elegant, no-cook starter or light lunch for a warm day.

Almonds bring healthy unsaturated fats along with a bit of fiber and protein, and the soup's creaminess comes entirely from the nuts and bread rather than any cream or butter, keeping saturated fat low. Because the recipe doesn't call for added salt at all—garlic, sherry vinegar, and the natural sweetness of the grapes carry the flavor—the sodium count stays remarkably low for a soup this rich-tasting.   • 1 cup seedless green grapeshalved, plus more for garnish

Instructions
