Soy-Glazed Cod and Edamame Rice Bowl with Sesame-Ginger Dressing

This bowl brings together two soy staples — a light soy glaze on the fish and a scoop of shelled edamame — for a meal that's equal parts light and satisfying. The cod cooks quickly under the broiler while the vegetables get prepped, so the whole thing comes together in under 30 minutes.
Edamame, whole soybeans still in their young, green form, are one of the more approachable phytoestrogen-rich foods to work into a weekly rotation, and they add plant protein and fiber alongside the fish. The sesame-ginger dressing brings in a little extra calcium from the sesame along with fresh ginger's warmth.
Feel free to swap the cod for another mild white fish, and use whatever crunchy vegetables you have on hand — shredded carrot and cucumber ribbons both work well here.
