Ingredients

  • 1 tablespoon olive oil
  • 1 medium oniondiced
  • 2 cloves garlicminced
  • 2 medium sweet potatoespeeled and cubed
  • 1 cup dried lentilsrinsed (green or brown)
  • 4 cups vegetable brothlow sodium
  • 1 teaspoon ground cumin
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon smoked paprika
  • 1 cup baby spinachoptional, stirred in at the end
  • 1/2 teaspoon sea saltto taste
  • 1/4 teaspoon black pepperfreshly ground

Instructions

  1. 1Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until fragrant.
  2. 2Add cubed sweet potatoes and lentils. Stir in cumin, turmeric, and smoked paprika.
  3. 3Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 30-35 minutes, until lentils and sweet potatoes are tender.
  4. 4Season with salt and pepper. Stir in spinach just before serving if desired.
  5. 5Ladle into bowls and serve warm.
