Sicilian cooking leans on pine nuts and fresh herbs to bring a dish to life, and both do plenty of work in this stuffed pepper filling. Ground turkey and riced cauliflower cook down with garlic, crushed tomato, toasted pine nuts, and basil, then get packed back into halved bell peppers and baked until tender.

Swapping the traditional white rice filling for cauliflower rice keeps the carbohydrate count modest while the peppers themselves add fiber and volume. Between the lean turkey, the vegetable-based filling, and the healthy fat from the pine nuts, this dinner fits a blood-sugar-conscious pattern while still carrying the bright, herby character of real Sicilian cooking.

The peppers can be assembled a day ahead and refrigerated unbaked, which makes this an easy one to prep on a weekend and simply bake off midweek when time is short.
