Sheet-Pan Honey Mustard Salmon with Brussels Sprouts

Honey and Dijon mustard make an easy glaze that turns simple roasted salmon into something worth repeating. The Brussels sprouts go in first to get a head start caramelizing, then the glazed salmon fillets join the pan for the last stretch of roasting.
Salmon's omega-3 fat profile makes this a naturally heart-healthy dinner, and it's a reasonable choice to reach for if you're paying attention to cholesterol, since it swaps easily in for a fattier cut of meat without giving up flavor or richness.
Look for fillets of similar thickness so they finish cooking at the same time, and pull the salmon as soon as it flakes easily with a fork.
Ingredients
- 4 salmon fillets (5 oz each)
- 1 lb Brussels sprouts — halved
- 2 tbsp Dijon mustard
- 1 tbsp honey
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 2 cloves garlic — minced
- salt and pepper — to taste

Instructions
- 1Preheat oven to 400°F and line a sheet pan with parchment.
- 2Whisk together mustard, honey, olive oil, lemon juice, and garlic.
- 3Toss Brussels sprouts with half the mustard mixture, salt, and pepper, and spread on the sheet pan. Roast 10 minutes.
- 4Push sprouts to one side, add salmon fillets to the pan, and brush with remaining mustard mixture.
- 5Roast 12-15 minutes more, until salmon flakes easily and sprouts are caramelized.
