A long lemon-mustard marinade tenderizes lean chicken thighs while the onions caramelize into a sweet, jammy sauce that needs very little else.

What makes this heart-healthy is the balance: skinless chicken keeps saturated fat low, the sauce is built almost entirely from onions and citrus rather than salt or butter, and a light hand with Dijon mustard adds depth without a heavy sodium load. Onions and lemon juice both contribute potassium, and the dish fits well within a DASH-style pattern when served alongside a whole grain and steamed vegetables.

Instructions

  1. 1Whisk lemon juice, mustard, garlic, 1 tbsp olive oil, and black pepper in a bowl. Add chicken and onions, toss to coat, and marinate at least 1 hour (or overnight) in the fridge.
  2. 2Remove chicken from the marinade, reserving marinade and onions. Heat remaining olive oil in a large skillet over medium-high heat; sear chicken 4-5 minutes per side until browned. Set aside.
  3. 3Add the marinated onions to the skillet with bay leaves and whole chile; cook over medium heat 15-20 minutes, stirring occasionally, until deeply softened and golden.
  4. 4Return chicken to the skillet with reserved marinade; cover and simmer 15 minutes until chicken is cooked through and onions are jammy.
  5. 5Discard bay leaves and chile pod. Garnish with parsley and serve.
