Senegalese Ginger-Turmeric Grilled Mackerel with Onion-Bissap Relish
Grilled mackerel marinated in ginger, turmeric, and lime, topped with a tangy hibiscus-steeped onion relish inspired by Senegalese flavors.

Coastal West African cooking makes wonderful use of oily, flavorful fish, and this dish takes its cue from Senegal's love of citrus-marinated grilled seafood. Mackerel gets rubbed with ginger, turmeric, garlic, and lime before hitting the grill, then it's topped with a relish of sliced onion steeped in tart hibiscus (bissap) for a bright, slightly tangy finish.
Mackerel is naturally rich in omega-3 fats, one of the most well-supported anti-inflammatory nutrients around, and pairing it with fresh turmeric, ginger, and garlic reinforces that direction. Hibiscus contributes its own antioxidant-rich color and tang without any added sugar, and the dish stays naturally low-carb and gluten-free from start to finish.
It's a quick weeknight dinner once the marinade is mixed — just a short rest, a few minutes on the grill, and a relish that comes together while the fish cooks.
Ingredients
Most ingredients here are everyday market staples across West Africa. A handful of specialty items may be easiest to find at a local open-air market or an African grocery store if you're elsewhere.
