Roasted Groundnut and Sweet Potato Porridge with Ginger
A comforting West African-style porridge of soft sweet potato simmered with roasted groundnut paste and fresh ginger.
This porridge takes its cue from the sweet potato and yam porridges found across West African kitchens, simmering orange-fleshed sweet potato until soft, then stirring in roasted groundnut (peanut) paste and a generous knob of fresh ginger. The result is creamy, a little nutty, and warmly spiced.
Orange sweet potato gets its color from beta-carotene, one of several antioxidant-rich plant pigments found in colorful produce, and ginger contributes its own warming, aromatic compounds. Groundnut paste adds plant protein and healthy fats, turning a simple root vegetable porridge into a more filling bowl.
Spoon it into bowls as-is for a light meal, or top with a scatter of chopped scallions and roasted peanuts for extra crunch. It also reheats beautifully the next morning, loosened with a splash of water or plant milk.
