When your stomach needs a break, this is about as gentle as cooking gets. Rice and water go into the pot together and just sit on low heat, stirred every so often, until the grains fall apart and the whole thing turns into porridge.
There's no acid, no heavy fat, and barely any seasoning — just a pinch of salt and a drizzle of olive oil at the end if you want it. Grated carrot melts into the porridge as it cooks, adding natural sweetness and a bit of fiber without anything that tends to aggravate acid reflux.
Ingredients
- 1/2 cup white rice — rinsed
- 1 medium carrot — peeled and finely grated
- 4 cups water — or low-sodium vegetable broth
- 1/4 teaspoon salt — optional, to taste
- 1 teaspoon olive oil — optional, for creaminess
Instructions
- 1Rinse the rice thoroughly under cold water until the water runs clear.
- 2In a large pot, bring water (or broth) to a boil.
- 3Add rice and grated carrot. Stir, then reduce heat to low.
- 4Simmer uncovered for 30–35 minutes, stirring occasionally, until the rice breaks down and the porridge becomes creamy.
- 5Season with a pinch of salt and drizzle with olive oil if desired.
- 6Serve warm. Can be garnished with a sprinkle of fresh parsley for added color (optional).
