Oats and ripe plantain both cook down into something soft and almost custardy, which makes this porridge feel more indulgent than a typical bowl of oatmeal while staying genuinely gentle to eat. The plantain sweetens the pot on its own, so there's very little added sugar needed.

We used only ripe (yellow, not green) plantain here in a modest amount, ripe banana-family fruit being much easier on a sensitive gut than the greener, starchier version, and skipped anything from the onion or garlic family entirely — there's simply no reason for them in a breakfast porridge. Cinnamon and toasted coconut add warmth and a little crunch without any citrus or heavy spice.

It's a five-minute prep, fifteen-minute cook kind of breakfast that leans into West African pantry staples while staying calm and predictable for anyone easing a touchy stomach into the day.
