Papaya Salad with Cucumber

Green papaya has almost none of the sweetness of the ripe fruit — it's crunchy and mild, closer to a cabbage or jicama, which makes it a natural match for a light dressing instead of anything heavy.
This salad skips the usual chili-heavy versions of papaya salad, since spicy dressings tend to be one of the first things to cut when acid reflux is an issue. Lime juice, a little low-sodium soy sauce, and a touch of honey do the work instead, and cucumber adds even more crunch without adding any acidity to worry about.
Ingredients
- 2 cups green papaya — shredded
- 1 cup cucumber — thinly sliced
- 1/4 cup carrot — julienned (optional)
- 2 tablespoons lime juice — freshly squeezed
- 1 tablespoon low-sodium soy sauce
- 1 teaspoon honey — or maple syrup
- 2 tablespoons fresh cilantro — chopped
Instructions
- 1Peel and shred the green papaya, slice the cucumber, and julienne the carrot if using.
