This hash starts with the sweet potatoes, which need the longest cooking time, then builds up with onion, garlic, and ground turkey until everything's browned and fragrant in one skillet.
Sticking to ground turkey, sweet potatoes, and simple aromatics keeps this dish squarely within a paleo way of eating, with no grains or dairy needed to round it out. Smoked paprika and cumin give it a warm, slightly smoky backbone that makes it taste like more than the sum of its parts. It works just as well for breakfast as it does for a quick dinner, and leftovers reheat easily the next day.
Ingredients
- 1 lb ground turkey
- 2 medium sweet potatoes — peeled and diced
- 1 medium onion — diced
- 2 cloves garlic — minced
- 2 tablespoons olive oil or avocado oil
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon ground cumin
- to taste salt and pepper
- 1/4 cup fresh parsley — chopped, for garnish
Instructions
- 1Heat olive oil in a large skillet over medium heat.
- 2Add diced sweet potatoes and cook for 8–10 minutes until slightly tender, stirring occasionally.
- 3Add onion, bell pepper, and garlic. Sauté for 3–4 minutes until vegetables are softened.
- 4Push vegetables to the side of the skillet and add ground turkey. Cook until browned and cooked through, breaking up any clumps.
- 5Mix turkey with the vegetables, add smoked paprika, cumin, salt, and pepper. Stir to combine and cook for another 2–3 minutes.
- 6Garnish with chopped parsley and serve warm.
