Built entirely from dates, nuts, cocoa, and coconut, these bites fit easily into a paleo-friendly snack rotation and travel well for anyone who needs something portable between meals. Rolling them while the mixture is still a little sticky is easiest done with slightly damp hands. A half hour in the fridge firms them up, and they'll keep in an airtight container for about a week, which makes them worth batching ahead.
Ingredients
- 1 cup medjool dates — pitted
- 1/2 cup almonds — raw
- 1/4 cup unsweetened cocoa powder
- 1/4 cup unsweetened shredded coconut
- 1 tablespoon coconut oil — melted
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon sea salt
Instructions
- 1Place dates and almonds in a food processor and pulse until finely chopped.
- 2Add cocoa powder, shredded coconut, melted coconut oil, vanilla extract, and sea salt. Process until mixture is sticky and holds together.
- 3Scoop out small portions and roll into 1-inch balls using your hands.
- 4Place energy bites on a baking sheet or plate and refrigerate for at least 30 minutes to firm up.
- 5Store in an airtight container in the refrigerator for up to 1 week.
