Built entirely from dates, nuts, cocoa, and coconut, these bites fit easily into a paleo-friendly snack rotation and travel well for anyone who needs something portable between meals. Rolling them while the mixture is still a little sticky is easiest done with slightly damp hands. A half hour in the fridge firms them up, and they'll keep in an airtight container for about a week, which makes them worth batching ahead.

Ingredients

  • 1 cup medjool datespitted
  • 1/2 cup almondsraw
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup unsweetened shredded coconut
  • 1 tablespoon coconut oilmelted
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon sea salt

Instructions

  1. 1Place dates and almonds in a food processor and pulse until finely chopped.
  2. 2Add cocoa powder, shredded coconut, melted coconut oil, vanilla extract, and sea salt. Process until mixture is sticky and holds together.
  3. 3Scoop out small portions and roll into 1-inch balls using your hands.
  4. 4Place energy bites on a baking sheet or plate and refrigerate for at least 30 minutes to firm up.
  5. 5Store in an airtight container in the refrigerator for up to 1 week.
