This okra soup skips the heavy starch base and leans on lean chicken breast for protein instead, which keeps each bowl satisfying without a big carbohydrate hit.

The turmeric and ginger aren't just for flavor — both are included here in line with the recipe's diabetes tag, as spices some people managing blood sugar are drawn to as part of a broader low-glycemic approach. Okra itself thickens the broth naturally as it cooks, no flour or cornstarch needed, and mushrooms add a bit of extra fiber and bulk. Served on its own, this is a genuinely low-carb bowl; add a small measured portion of brown rice or millet on the side only if your plan allows for it.

Stir the spinach or ugu leaves in right at the end so they stay bright and just barely wilted.

Ingredients

  • 2 cups fresh okrachopped or grated
  • 200 g lean chicken breast or turkeyskinless, cut into bite-sized pieces
  • ½ cup mushroomsoptional, adds fiber + satiety
  • 2 tbsp crayfish powderfor flavor, optional
  • 1 tbsp olive oil or canola oil
  • 1 medium onionchopped
  • 1 fresh tomatoblended, optional for mild base
  • 1 fresh chili pepperoptional, for spice if tolerated
  • ½ tsp turmericblood sugar support + anti-inflammatory
  • ½ tsp gingeroptional
  • 2 cups low-sodium chicken broth or water
  • ½ tsp saltor to taste
  • 1 handful spinach or ugu leaveswashed, chopped

Instructions

  1. 1In a pot, heat olive oil and sauté onions until soft.
  2. 2Add blended tomato and chili, stir and cook for 5 minutes.
  3. 3Add chicken/turkey pieces, stir in turmeric, ginger, and crayfish powder. Cook until lightly browned.
  4. 4Pour in chicken broth, simmer for 15–20 minutes until protein is tender.
  5. 5Add chopped okra and mushrooms, stir gently. Simmer uncovered for 7–10 minutes until okra thickens.
  6. 6Add spinach/ugu leaves last, stir for 1–2 minutes. Remove from heat.
  7. 7Serve warm with a small portion of whole grains (like ½ cup brown rice, millet, or ofada rice) OR eat alone for light, low-carb option.
