Nigerian Light Efo Riro with Mackerel and Spinach

Efo riro is a staple of the Nigerian table, and this lighter version keeps the pepper-forward tomato base and generous greens while pulling back on the oil and salt that traditional versions often lean on. Fresh mackerel stands in for the usual mix of meats, and six cups of spinach make sure the greens are the real star.
The heart-healthy angle here comes down to a few deliberate choices: one tablespoon of olive oil instead of a heavy pour, mackerel's naturally heart-friendly omega-3 fats, and skipping the usual salt-cured stockfish or extra bouillon that can push sodium up fast. Fresh ginger, garlic, and scotch bonnet carry the flavor instead. Wilted spinach folded in at the end keeps its color and nutrients—and adds a good dose of potassium to the pot.
Serve it warm over a small portion of brown rice or boiled plantain for a satisfying, home-style dinner.

- 1 onion — chopped, divided
- 2 red bell peppers — chopped
- 1 tomato — chopped
- 2 cloves garlic — minced
- 1 tsp fresh ginger — grated
- 0.5 scotch bonnet pepper — minced, optional
- 8 oz fresh mackerel fillet — or canned in water, drained, flaked
- 6 cups fresh spinach — washed and chopped

Instructions
- 1Blend bell peppers, tomato, and half the onion into a coarse purée; set aside.
- 2Heat olive oil in a pot over medium heat; sauté remaining onion, garlic, ginger, and scotch bonnet 2-3 minutes until fragrant.
- 3Pour in the pepper-tomato purée and simmer uncovered 15 minutes, stirring occasionally, until reduced and deepened in color.
