Efo tete, or green amaranth, is one of those Nigerian greens that turns silky and mellow the moment it hits a hot pot of peppered tomato stew. Here it's built up with plenty of garlic and a modest amount of oil, then finished with pan-fried croaker fish for a stew that eats like a full meal over a small serving of rice or boiled plantain.
We leaned into garlic and a generous pile of green amaranth for this one, both ingredients that fit a liver-friendly way of eating, and kept the oil to a light hand rather than deep-frying anything. It's a genuinely warming bowl of food, not a fussy one.
