Moin moin is a steamed pudding made from blended, peeled black-eyed peas — dense, protein-rich, and traditionally eaten as is. Slicing the steamed cakes into rounds and pan-searing them adds a caramelized edge, and a quick glaze of miso, honey, ginger, and rice vinegar borrows a flavor combination more common to Japanese cooking than Nigerian.
Because the base is entirely blended beans, vegetables, and egg, with nothing derived from meat, this is a vegetarian recipe, and it's naturally gluten-free since there's no flour anywhere in the batter. It works equally well as a snack in small pieces or as a light lunch alongside rice or greens.
