Traditional injera ferments for days, but this quick version skips that step, whisking teff flour straight into a thin batter and pan-cooking it into a soft, slightly spongy flatbread ready in minutes. Teff is naturally gluten-free, so the whole plate stays that way too.

Because it's built entirely from lentils, teff, and vegetables, this is a genuinely plant-based African meal that's high in both protein and fiber, no meat or dairy needed to feel complete. It's a good one to keep in weekly rotation for anyone eating more plant-forward meals.

  • 1.5 cups dried red lentils, rinsed
  • 1 red onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp berbere spice blend

  • 3 cups water or low-sodium vegetable broth

Instructions

Misir Wat

  1. 1Heat olive oil in a pot and cook the onion over medium heat until deeply softened, about 10 minutes.
  2. 2Add garlic and ginger, cooking for 2 minutes until fragrant.
  3. 3Stir in berbere spice and tomato paste, cooking for 2 minutes.
  4. 4Add the rinsed lentils and water or broth; bring to a boil.

Quick Teff Injera

  1. 1Whisk teff flour, water, and salt into a thin, smooth batter and let rest 10 minutes.
  2. 2Heat a lightly oiled nonstick skillet over medium heat and pour a thin layer of batter, swirling to coat.
  3. 3Cover and cook for 2-3 minutes until bubbles form and the surface looks dry; do not flip.
