Low-Glycemic Beans & Plantain Combo
Soft-cooked beans simmered with turmeric and ginger, finished with tender plantain rounds — a filling, low-glycemic plate for diabetes-friendly eating.

Beans and plantain is a classic pairing, and this version keeps portions moderate and leans on turmeric and ginger instead of heavy oil for flavor.
Because this recipe is tagged for diabetes, the choices here are intentional: beans are high in fiber and protein, which slows down how quickly their carbohydrates hit your system, and the plantain is used ripe-but-firm rather than fully ripe, keeping its natural sugars a bit more moderate. Turmeric is included partly for its warm flavor and its reputation as a spice some people managing blood sugar find worth including regularly, alongside ginger's mild, soothing character. None of this replaces medical guidance, but it does make for a plate that's easier to build a diabetes-friendly diet around.
Serve it in the small-to-moderate portions the recipe suggests, and pair with a side of greens if you want to round out the meal.
