Cauliflower stands in for the usual starchy swallow here, blended and thickened with a little psyllium husk until it holds together well enough to eat by hand.

This swap is the whole point of the recipe's diabetes tag: traditional fufu is carbohydrate-dense, while cauliflower brings the same soft, scoopable texture with a fraction of the carbs and a good amount of fiber instead. The stew alongside it leans on lean protein and vegetables cooked down with turmeric and ginger, seasonings that show up here as part of a broader low-glycemic approach rather than as a fix for anything. Bell pepper and tomato add natural sweetness to the sauce without needing any added sugar.

Shape the fufu into balls while it's still warm and pliable, then serve it hot alongside the stew, scooping the way you would with any traditional swallow.

Ingredients

  • For Cauliflower Fufu:
  • 1 medium head of cauliflowerabout 500 g, florets only
  • 2 tbsp psyllium husk powderfor binding, optional but recommended
  • ½ tsp salt
  • ½ cup wateradjust as needed
  • For Vegetable Stew:
  • 2 cups spinachugu, or kale (washed, chopped)
  • 1 medium onionchopped
  • 2 medium tomatoesblended or chopped
  • 1 bell pepperblended, for mild sweetness
  • 1 fresh chilioptional, if tolerated
  • 2 tbsp olive oil or canola oil
  • 200 g lean proteingrilled chicken, turkey, or fish
  • 1 tbsp crayfish powderoptional, for flavor
  • ½ tsp turmericsupports blood sugar balance
  • ½ tsp gingeroptional, anti-inflammatory
  • 1 cup low-sodium chicken broth or water
  • Salt to taste

Instructions

  1. 1Cauliflower Fufu:
  2. 2Wash and chop cauliflower into florets. Steam for 5–7 minutes until soft.
  3. 3Blend steamed cauliflower until smooth.
  4. 4Transfer to a pan, add psyllium husk and salt. Stir on low heat until thick and stretchy like fufu.
  5. 5Shape into balls and keep warm.
  6. 6Vegetable Stew:
  7. 7Heat olive oil in a pot. Sauté onions until soft.
  8. 8Add blended tomato, bell pepper, and chili. Cook for 8–10 minutes until sauce thickens.
  9. 9Stir in turmeric, ginger, and crayfish. Add lean protein and cook for 10–12 minutes.
  10. 10Add broth or water, simmer for 5 minutes.
