Lightened Bobotie (South African Spiced Beef Bake)
Curried lean ground beef with raisins and apricot, baked under a savory egg custard topping, South African style.
Ingredients
- 500 g lean ground beef (93% lean)
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tbsp curry powder
- 1 tsp ground turmeric
- 1 slice whole wheat bread, torn, soaked in 0.5 cup low-fat milk
- 0.25 cup raisins
- 1 tbsp apricot jam, no added sugar
- 1 tbsp olive oil
- 2 eggs
- 0.5 cup low-fat milk for topping
- 2 bay leaves
- to taste salt and pepper
Instructions
- Preheat oven to 350°F (180°C).
- Heat olive oil in a pan and sauté onion and garlic until soft.
- Add ground beef, curry powder, and turmeric; cook until browned, breaking it up as it cooks.
- Squeeze excess milk from the soaked bread and stir the bread, raisins, and apricot jam into the beef mixture; season with salt and pepper.
- Transfer to a baking dish, press flat, and tuck bay leaves on top.
- Whisk eggs with the remaining milk and pour evenly over the meat mixture.
- Bake for 35-40 minutes until the egg topping is set and golden.
- Let rest 5 minutes before serving.
