Lightened Bobotie (South African Spiced Beef Bake)

Curried lean ground beef with raisins and apricot, baked under a savory egg custard topping, South African style.

Ingredients

  • 500 g lean ground beef (93% lean)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp curry powder
  • 1 tsp ground turmeric
  • 1 slice whole wheat bread, torn, soaked in 0.5 cup low-fat milk
  • 0.25 cup raisins
  • 1 tbsp apricot jam, no added sugar
  • 1 tbsp olive oil
  • 2 eggs
  • 0.5 cup low-fat milk for topping
  • 2 bay leaves
  • to taste salt and pepper

Instructions

  1. Preheat oven to 350°F (180°C).
  2. Heat olive oil in a pan and sauté onion and garlic until soft.
  3. Add ground beef, curry powder, and turmeric; cook until browned, breaking it up as it cooks.
  4. Squeeze excess milk from the soaked bread and stir the bread, raisins, and apricot jam into the beef mixture; season with salt and pepper.
  5. Transfer to a baking dish, press flat, and tuck bay leaves on top.
  6. Whisk eggs with the remaining milk and pour evenly over the meat mixture.
  7. Bake for 35-40 minutes until the egg topping is set and golden.
  8. Let rest 5 minutes before serving.
