Bobotie is South Africa's beloved curried meat bake, a mix of spiced ground beef, softened bread, and dried fruit baked under a savory egg custard that sets golden on top. This lighter version uses lean ground beef and low-fat milk in both the meat mixture and the topping, without losing the dish's signature sweet-savory character.

Curry powder and turmeric give the beef its warm color and flavor, while raisins and a spoonful of apricot jam add small bursts of sweetness that balance the spice. Bay leaves tucked on top before baking are a traditional touch that perfumes the whole dish as it bakes.

Using lean beef and reducing the fat in the custard keeps this a genuinely high-protein main without the heaviness of the original.   • 1 slice whole wheat bread, torn, soaked in 0.5 cup low-fat milk
  • 0.25 cup raisins
  • 1 tbsp apricot jam, no added sugar
  • 1 tbsp olive oil
  • 2 eggs
  • 0.5 cup low-fat milkfor topping
  • 2 bay leaves

Instructions

  1. 1Preheat oven to 350°F (180°C).
  2. 2Heat olive oil in a pan and sauté onion and garlic until soft.
  3. 3Add ground beef, curry powder, and turmeric; cook until browned, breaking it up as it cooks.
  4. 4Squeeze excess milk from the soaked bread and stir the bread, raisins, and apricot jam into the beef mixture; season with salt and pepper.
  5. 5Transfer to a baking dish, press flat, and tuck bay leaves on top.
  6. 6Whisk eggs with the remaining milk and pour evenly over the meat mixture.
