Ingredients
- 1 cup dried lentils — rinsed
- 1 large onion — chopped
- 4 cloves garlic — minced
- 2 medium carrots — diced
- 2 stalks celery — diced
- 6 cups vegetable broth — or chicken broth
- 1 teaspoon cumin powder — optional
- 1 teaspoon salt — to taste
- 1/2 teaspoon black pepper — to taste
- 2 tablespoons olive oil
- 2 tablespoons fresh parsley — chopped, for garnish
Instructions
- 1Heat olive oil in a large pot over medium heat.
