This is a pasta salad built for make-ahead lunches: whole wheat orzo tossed while still warm with lemon, olive oil, and a handful of Mediterranean staples so it soaks up flavor as it cools. Chickpeas and artichokes make it substantial enough to eat as a full meal.

Whole wheat orzo and chickpeas together bring meaningful fiber to the bowl, and the olive oil here is mostly unsaturated fat rather than saturated, both of which support the heart-healthy and cholesterol tags. Olives and capers add briny depth without needing much added salt beyond what they naturally carry.
