Lemon-Herb Grilled Branzino with Charred Asparagus
Whole grilled branzino fillets rubbed with lemon, garlic, and oregano, served alongside smoky charred asparagus spears.
Branzino is one of those fish that barely needs dressing up — a few minutes over hot coals with lemon, garlic, and torn oregano is enough to bring out its delicate, slightly sweet flesh. We keep the marinade light and oil-based rather than buttery, so the fish stays the star instead of getting weighed down.
Grilling both the fish and the asparagus over direct heat means dinner comes together in under 30 minutes with almost no cleanup. The asparagus takes on a bit of char that plays well against the bright lemon on the fish.
This one leans on lean fish and a generous pour of olive oil rather than saturated fat, which is why it fits comfortably into a heart-healthy, mediterranean way of eating — and at under 300 calories a serving with well over 30 grams of protein, it works just as well for anyone keeping an eye on their overall calorie load. Serve it with a simple side of grains or greens and you have a complete meal in well under half an hour, which makes it a realistic weeknight option and not just a special-occasion dinner.
Ingredients
- 4 fillets branzino (sea bass), skin-on — about 6 oz each
- 2 tbsp extra virgin olive oil
- 2 lemons — one zested and juiced, one cut into wedges
- 3 cloves garlic — minced
- 2 tbsp fresh oregano — chopped
- 1 tbsp fresh parsley — chopped
- 1 lb asparagus — trimmed
- 1/2 tsp sea salt — divided
- 1/4 tsp black pepper
These ingredients are standard at most major European supermarkets.
Instructions
- 1Preheat a grill or grill pan to medium-high heat.
- 2In a small bowl, whisk together olive oil, lemon zest, lemon juice, garlic, oregano, and half the salt and pepper.
- 3Pat the branzino fillets dry and brush both sides with the lemon-herb mixture. Let sit for 10 minutes.
- 4Toss the asparagus with a light drizzle of olive oil and the remaining salt and pepper.
- 5Grill the branzino skin-side down for 4-5 minutes, then flip and cook another 2-3 minutes until it flakes easily.
- 6Grill the asparagus alongside for 5-6 minutes, turning occasionally, until charred and tender-crisp.
- 7Plate the fish over the asparagus, scatter with parsley, and serve with lemon wedges.
