Lebanese Fattoush Salad with Grilled Chicken
Crisp romaine, cucumber, and radish tossed with sumac and toasted pita, topped with grilled chicken for a bright, filling Levantine salad.
Fattoush is a Lebanese bread salad built on crunch: romaine, cucumber, radish, and tomato tossed with a tangy sumac-lemon dressing and finished with crisped pieces of pita. Topping it with grilled chicken turns it from a side salad into a full, satisfying meal.
Using just a small amount of toasted pita rather than piling the bowl with croutons keeps the carbohydrate content reasonable while the mountain of fresh vegetables adds volume, crunch, and fiber for very few calories. The grilled chicken breast is simply seasoned, so it adds lean protein without extra fat, making this a genuinely filling salad rather than a token bowl of leaves.
The sumac gives the dressing its distinctive tang — if you can't find it, a little extra lemon juice works as a stand-in.
Ingredients
These ingredients are common at Middle Eastern grocers; a well-stocked international supermarket usually carries them too.
