Stuffed peppers are a classic for a reason — they're basically a full dinner packed into their own edible bowl — and this version swaps the usual rice filling for cauliflower rice to keep things low-carb.
Browning the beef with onion, garlic, and Italian seasoning before it goes into the peppers builds a lot of flavor upfront, and using cauliflower rice instead of grain keeps this dish fitting neatly into a keto diet. Baking covered first keeps the peppers tender, then finishing uncovered lets the cheese on top turn golden and bubbly. Let them rest a few minutes out of the oven before digging in.
Ingredients
- 4 large bell peppers — tops cut off, seeds removed
- 1 lb ground beef — 85% lean
- 1/2 cup onion — diced
- 2 cloves garlic — minced
- 1 cup cauliflower rice — fresh or frozen
- 1 cup shredded cheese — cheddar or mozzarella
- 1 can (14 oz) diced tomatoes — drained
- 1 teaspoon Italian seasoning

- 2 tablespoons olive oil
Instructions
- 1Preheat oven to 375°F (190°C). Prepare bell peppers by cutting off tops and removing seeds.
- 2Heat olive oil in a large skillet. Sauté onion and garlic until fragrant, about 2–3 minutes.
- 3Add ground beef to skillet, season with salt, pepper, and Italian seasoning. Cook until browned.
- 4Stir in cauliflower rice and drained diced tomatoes. Simmer for 5 minutes until mixture is heated through.
- 5Remove from heat, stir in half of the shredded cheese.
- 6Stuff each bell pepper with the beef mixture and place in a baking dish.
- 7Top peppers with remaining cheese, cover with foil, and bake for 25 minutes.
- 8Remove foil and bake for an additional 10 minutes until cheese is melted and bubbly.
