Kachumbari-Topped Grilled Beef Skewers
Cumin and garlic marinated beef sirloin grilled nyama choma-style and topped with a fresh lime-dressed kachumbari.
Ingredients
- 700 g lean beef sirloin, cubed
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 lemon, juiced
- 1 tsp ground cumin
- 1 tsp paprika
- to taste salt and pepper
- 2 tomatoes, diced for kachumbari
- 1 red onion, finely sliced for kachumbari
- 1 green chili, minced for kachumbari, optional
- 1 tbsp chopped cilantro for kachumbari
- 1 lime, juiced for kachumbari
Instructions
- Toss beef cubes with olive oil, garlic, lemon juice, cumin, paprika, salt, and pepper; marinate at least 20 minutes.
- Thread the beef onto skewers.
- Grill over medium-high heat for 10-12 minutes, turning occasionally, to desired doneness.
- While the beef grills, combine tomatoes, red onion, chili, cilantro, and lime juice with a pinch of salt for the kachumbari.
- Serve the skewers topped with fresh kachumbari.
