Nyama choma, literally 'roasted meat,' is a Kenyan weekend tradition, meat grilled simply over open flame and eaten with your hands. This version keeps that same spirit with lean beef sirloin cubes marinated in cumin, garlic, and lemon, then skewered and grilled until charred at the edges.

Kachumbari, a fresh tomato and red onion salad sharpened with lime and a bit of chili, is the classic accompaniment, and it does real work here, cutting through the richness of the grilled meat with acidity and crunch.

With lean sirloin as the base and no starch on the plate, this is a genuinely high-protein, low-carb dinner. It also fits well for anyone thinking about fitness and recovery nutrition, since a full serving delivers a substantial amount of protein without much excess fat. Instructions

  1. 1Toss beef cubes with olive oil, garlic, lemon juice, cumin, paprika, salt, and pepper; marinate at least 20 minutes.

  4. 4While the beef grills, combine tomatoes, red onion, chili, cilantro, and lime juice with a pinch of salt for the kachumbari.
