Kedjenou is traditionally cooked in a sealed clay pot, shaken occasionally over the fire rather than stirred, so nothing sticks and no oil is ever needed — the chicken and vegetables simply release their own liquid and slowly braise in it. This version uses a heavy pot with a tight lid on the stovetop, but keeps the same technique.

Because the dish is built entirely from bone-in chicken thighs, eggplant, tomato, and pepper with not a drop of added oil, it comes together naturally low in both fat and carbohydrate while staying deeply flavorful from the long, slow braise. That combination of lean protein and unthickened vegetables is exactly what makes it a genuine fit for blood-sugar-conscious eating.

Resist the urge to add water — the whole point of the technique is letting the vegetables provide all the liquid, which keeps the finished sauce concentrated and full of flavor. Serve it as it is, straight from the pot, with nothing more than a spoon.
