Two leafy greens go into this juice rather than one — spinach for volume, kale for a slightly deeper, more mineral flavor — balanced out by two whole green apples so it doesn't taste like straight vegetables.
Dark leafy greens are a plant-based iron source many people managing anemia lean on, and the lemon juice here does double duty, brightening the flavor while also helping the body absorb the iron from the greens. A little grated ginger is optional if you want some warmth.

- 2 cups fresh spinach — washed
- 1 cup kale leaves — stems removed
- 2 medium green apples — cored and chopped
- 1 tablespoon lemon juice — freshly squeezed
- 1 cup water or coconut water — for blending
- 1 teaspoon fresh ginger — grated, optional
Instructions
