This porridge takes its time on purpose — twenty to twenty-five minutes of simmering breaks the rice down until it's soft enough that it barely needs chewing, with grated carrot cooked in for a bit of color and gentle sweetness.
Plain, well-cooked rice porridge is a common go-to for people managing IBS or IBD, especially during flare-ups when simple, low-fiber, easy-to-digest foods feel more manageable. A pinch of ground ginger is optional if you want a little warmth, but the porridge is mild enough to eat as-is.
Ingredients
- 1/2 cup white rice — washed
- 2 cups water
- 1/2 cup carrots — grated or finely chopped
- 1/4 teaspoon salt — optional, to taste
- 1/4 teaspoon ground ginger — optional, for flavor
Instructions
- 1Rinse rice thoroughly and place in a medium pot with water.
- 2Bring to a boil over medium heat, then reduce to a simmer.
