These pinwheels turn a simple hummus wrap into something more fun to look at and easier to eat — a whole wheat tortilla spread with creamy hummus, layered with shredded carrot, baby spinach and roasted red pepper strips, rolled tight and sliced into colorful spirals. No cooking required, and the whole thing comes together in fifteen minutes.

This is a genuinely kid-friendly Middle Eastern-style snack: hummus is naturally mild and creamy, the vegetables are all soft or thinly cut for easy eating, and the pinwheel shape makes lunchbox food feel a little more exciting. It's plant-based from top to bottom, needing nothing more than a good hummus and a few fresh vegetables.

Wrap tightly in plastic wrap and chill for 15-20 minutes before slicing — it makes for much cleaner, more even pinwheels that hold together well in a lunchbox.
