Heart-Smart White Bean & Kale Skillet with Lemon
A quick one-pan skillet of white beans and wilted kale, finished with lemon and a touch of Parmesan.
This skillet is proof that a genuinely satisfying dinner doesn't need much—kale wilted down with garlic, then simmered with creamy white beans until everything comes together into something between a stew and a sauté. A finish of fresh lemon and a light sprinkle of Parmesan rounds it out.
White beans and kale are both quietly excellent for a heart-conscious plate: the beans bring fiber and plant protein with almost no saturated fat, and kale adds potassium along with its own fiber. Using low-sodium broth and just a small, optional amount of Parmesan at the very end keeps the sodium reasonable for a dish that still tastes rich and savory, and lemon juice and zest do a lot of the flavor work that salt might otherwise carry.
It comes together in about half an hour and reheats well, making it a solid option for a weeknight dinner with leftovers built in.
Ingredients
- 1 tbsp olive oil
- 1 onion — diced
- 3 cloves garlic — minced
- 0.25 tsp red pepper flakes — optional
- 3 cups kale — chopped, stems removed
- 3 cups cooked cannellini beans — or low-sodium canned, rinsed
- 1 cup vegetable broth — low-sodium
- 2 tbsp lemon juice — plus zest
- 2 tbsp grated Parmesan — optional, small amount
These ingredients are standard at most North American supermarkets.
Instructions
- 1Heat olive oil in a large skillet over medium heat; sauté onion 5 minutes until soft. Add garlic and red pepper flakes, cook 1 minute.
- 2Add kale in batches, stirring until wilted, about 3-4 minutes.
- 3Stir in white beans and vegetable broth; simmer 8-10 minutes until beans are heated through and slightly creamy.
- 4Remove from heat and stir in lemon juice and zest.
- 5Top with a light sprinkle of Parmesan, if using, and serve warm.
